Cocoa Chai Eggnog
Ingredients
Method- 90g Egg Yolks
- 260g Sugar
- 181g Milk
- 726g Heavy Cream
- 5g Vanilla Paste
- 45g deZaan True Gold Cocoa Powder
- 2g Fresh Nutmeg
- 1g Salt
- 1g Star Anise
- 4g Ginger
- 2g Fennel
- 1g Cardamom
- 3g Turmeric
- 5g Cinnamon
- 3g Black Pepper
- In a pot, combine the sugar, milk, and heavy cream. Bring to a simmer.
- Add in the spices, salt and vanilla paste. Turn off the heat, cover the pot and let steep for 10 minutes.
- Bring the pot back to a simmer. Temper the liquid into the egg yolks. Strain back into the pot.
- Cook on low until nape 82°C/180°F.
- Turn off the heat, blend in the deZaan True Gold cocoa powder.
- Stain into an ice bath.
