Part 1: For the cake
Ingredients
Method- 375g Salted Butter
- 40g Ground Almond
- 1g Mixed Spice (recipe below)
- 1g Vanilla extract
- 60g Honey
- 85g Cake flour
- 14g Terra Rossa Cocoa Powder
- 220g Eggs
- 200g Egg yolks
- 150g Sugar
- Preheat your deck oven’s top heat at 250°C with racks at the bottom so that the cake will not have direct contact during baking.
- Prepare baking trays with parchment paper.
- Cream butter, ground almonds, mixed spice, vanilla, honey in a mixing bowl until light and creamy.
- Sift and mix flour into the butter mixture.
- Beat whole eggs and egg yolks with sugar in another bowl until light and foamy.
- Separate butter mixture equally into 2 bowls. Sift cocoa powder into 1 of the bowls and mix thoroughly.
- Separate egg mixture equally into 2 and fold into the batters. (You will get 1 regular batter and 1 chocolate batter)
- Start the baking process by applying a layer of batter in the tray and baking until golden brown and repeat until all the batter is used up.
- Unmould when done and let cool completely on a wire rack.
Part 2: For the mixed spice
Ingredients
Method- 2g Cinnamon powder
- 1g Clove powder
- 1g Nutmeg
- Mix all together.
